What are Phenesse staves and where are the products sourced from?

The Phenesse™ stave range consists of 2 types of staves, Medium Long French Oak 11mm and Supreme French Oak 11mm. Medium Long French Oak 11mm has a sweet, balanced and elegant profile that adds volume and creamy sensations. Supreme French Oak 11mm has a sweet, toasted and elegant profile that adds length and roundness. The raw material is sourced from high quality oak forests and manufactured by a reputable French oak company. Phenesse is designed specifically for the U.S. market. The wood selection and toasting methodology (extra-long toasting cycles, softer profiles) are to ensure high quality and consistency with a great price.

What are its specifications?

Each stave is 11mm thick, with an average weight of 0.7lb/stave. Product dimensions are 36” x 2.16” x .43”.

How are the staves packaged?

Each pack consists of 2 fans of 14 staves (28 staves total).

How are the staves toasted?

Phenesse™ staves are toasted using the convection toasting method with a long toasting cycle, after 24 months of seasoning. Its rigid process allows a great control and consistent oak profiles for balanced aromas and characteristics over time.

How many staves do I need to use on my wine?

What is the time of contact to ensure a full extraction and integration of oak components?

We recommend an optimum contact time of 4 to 5 months.

When should I use the staves?

The staves can be used during fermentation or as soon as the alcoholic fermentation is complete.

Can I reuse the staves?

It is not recommended but they can be used if immediately transferred into another wine. The staves should not be stored once they have been used. Discard the staves after the recommended contact time.

Are the staves tested for TCA?

Yes, they are tested for TCA.

I produce organic wines, can I use Phenesse staves?

Yes, a certificate can be provided if necessary.

I produce Kosher wines, can I use Phenesse staves?

Yes.

If I don’t use the whole box of staves, can I store the rest for future use?

Yes, as long as the bag is resealed really well and stored in a dry and clean space.

Do you offer sample trials?
